Recipe: Leg of Lamb

Recipe:

Ingredients

2kg approx Leg of Lamb
3 Cloves Garlic
2 Sprigs of Rosemary
1 tsp Oil
Salt

3x Kumara or Potato, peeled
1 Tbsp Ghee or Oil
Salt & Pepper

Method

Preheat the oven to 200 degrees.

Crush garlic with salt to make a paste.
Remove rosemary sprigs, chop
Put all together in a small bowl with oil and mix to make the marinade.

Use your knife to poke holes in the lamb.
Spread the marinade all over the lamb and ensure to push the marinade into the holes.

Add a Tbsp Ghee to baking dish. Preheat in the oven for 5mins.

Cut up the kumara into wedges and add them to the baking dish with Salt and Pepper. Give them a good mix so they are coated with the oil,

Put the lamb leg onto your oven racks in the oven.
Put your wedges on the tray below, to catch all the juices from your lamb.

Cook for 1hr 30mins – cook longer for more well done.
Rest the meat for 15mins, covered in tin foil.

Serve.
